
Ethiopia Yirgacheffe Koke Shalaye Washed
Yirgacheffe is renowned for its floral aroma and rich fruity notes.
The Koke beans come from backyard orchards of small farmers surrounding the area. Farmers handpick the fresh and ripe berries in their own yards, which are delivered to the processing plant in the afternoon. The fresh berries are poured into a large water tank (a common feature in almost all Ethiopian washing stations), shaped like a funnel, where gravity guides them to the pulping machine.
The pulped beans with their parchment intact undergo density sorting. There are three channels: sinking to the bottom, floating in the water, and lingering on the surface. All G1 grade beans come from the channel sinking to the bottom, which leads to a shaded fermentation tank.
This bean carries distinct floral notes of purple flowers and purple fruits. On the palate, it presents flavors of blueberries, dark mixed berries, sweet and juicy, with a rich layering of tastes.
