Step 1: Double Anaerobic Fermentation
The beans undergo two separate stages of oxygen-free fermentation. By utilizing specific yeast strains and precise temperature control, the natural potential of the local varieties is amplified, successfully developing the signature "Rose" scent. - Step 2: Honey Process
Following fermentation, the beans are dried with the mucilage (sticky fruit layer) still attached. This allows the natural sugars to penetrate deep into the bean, providing a honey-like sweetness and a silky-smooth mouthfeel.
