To commence, the journey begins with the careful placement of coffee cherries within a pressurized stainless steel tank. Here, a delicate dance with carbon dioxide transforms the environment into an anaerobic haven. Over the span of five days, the cherries undergo a fermentation ritual, releasing their essence into the vessel.
Emerging from this transformative process, the cherries shed their skins, preparing for a second act of fruit fermentation. Meanwhile, the extracted cherry juice mingles with a symphony of "fruit juice," a blend comprising the sweetness of peaches and the exotic allure of lychee. This fusion embarks on a three-day voyage, fermenting into a tapestry of fruity notes that will soon envelop the beans.
As time progresses, the culmination draws near. The beans, now imbued with the essence of this intricate dance, undergo a gradual drying process spanning five days. This meticulous drying phase bestows upon the beans a luscious juiciness akin to ripe peaches, a sweetness reminiscent of lychee, and a hint of lingering strawberry tartness.
Upon brewing, this coffee transcends expectation. When enjoyed hot, it unveils a fragrant sweetness akin to peach nectar, while when sipped cold, it refreshes the palate with the clarity and coolness of a fruit-infused tea. Layered with complexity yet maintaining a pristine and silky mouthfeel.
