
Colombia Luisa Geisha Washed
The Luisa has a history of around 100 years. Originally, it was not a coffee plantation but a farm that raised cattle and cultivated sugarcane. When coffee beans became popular, it transformed into a coffee estate with its coffee processing facility, selling beans with husks.
It was only five years ago that the current owner, Juan Pablo, decided to specialize in producing specialty coffee and experiment with small-scale varieties, such as Geisha, Pacamara, Tabi, and others.
They combined sun-drying, honey processing, and experimental fermentation methods to take a different path. Initially, fermentation experiments were conducted using plastic barrels for carbonic maceration. To scale up, Juan purchased large stainless steel barrels used for brewing beer and found the flavors to be outstanding! Juan experimented with various fermentation methods, different microbes, yeasts, and even less common and more unique fermentation techniques, such as fruit juice and fortified wine.
